Scones are somewhat elusive to me… They can be sweet or savory, crumbly, while not tasting dry, baked and sliced in a triangle (why? Like does anyone actually know?), and as with all pastry making, I felt like they required that extra je ne sais quois that only true bakers possess.
Well, I threw those worries to the door, and said, “Bobby Flay, step aside, we’re having brunch at my place.” I gathered the troops (ingredients) and went to battle (turned on oven). Without any help from “je ne sais quois,” I relied on my very rudimentary baking skills and was able to create scones fit for a queen (me). They are moist, but not too moist, sweet from the dried fruit, and simply divine when paired with a steaming cup of coffee.
In the true spirit of fall, I included dried cranberries for these special guys. However, feel free to swap the same amount for any other dried fruit, chopped nuts, or chocolate chips. Then don your most cosmopolitan outfit, slip on a pair of gloves, and set the table for tea-time, because these sophisticated treats were made for royalty. Enjoy!
Cranberry Chia Scones
Yields 8 scones
INGREDIENTS:
DRY:
- 1 + ½ cup almond flour
- ½ cup rolled oats
- ¾ t baking soda
- ¼ t salt
- ⅓ cup dried cranberries (I also threw in a couple of chopped dates, yum yum yum!)
WET:
- 2 chia eggs (2 T chia seeds mixed with 6 T water)
- ½ t vanilla extract
- 1 T maple syrup
DIRECTIONS:
- 1. Preheat oven to 350 degrees.
- 2. Mix all dry ingredients in a bowl.
- 3. In a tiny bowl – make the chia egg! Simply combine the chia seeds with water, and let soak up and get gooey (about 5 minutes).
- 4. Once chia egg is ready, add vanilla and maple syrup, giving a good swirl.
- 5. Mix wet with dry, and combine with hands (you’ll be tempted to add more liquid, but it’s not necessary I promise!!! Get in there and make it werk!)
- 6. Once you’ve formed a dough, press flat (about 1” deep), and cut into equal sizes.
- 7. Place on a lined baking tray and bake away for 12 minutes.
- 8. Let cool for 5 minutes, then grab some tea and feel SOPHISTICATED!
