Sauces, spreads, and dips are the perfect vehicle to sneak in ALL THE EXTRA GOODS. And by goods I mean nutritious and delicious ingredients. My absolute favorite sauce is a simple basil pesto. Then one day when I realized my spinach was looking wilty and sad, I knew I would need to repurpose those leaves before their time was out. I knew pasta would be on the menu (making pesto an obvious addition), so I simply added the sad greens to my typical basil recipe and voila! A totally delicious, extra green, NUTRIENT PACKED rendition of the noodle’s best friend, pesto.
Greens + Basil Pesto
INGREDIENTS:
- 1 cup packed greens of choice (spinach, kale, arugula are GREAT options)
- 1/3 – 1/2 cup basil
- 1/4 cup sunflower seeds
- 2 cloves of garlic
- 2 T nutritional yeast
- 1/4 cup olive oil
- juice and zest of 1/2 a lemon
- salt and pepper, to taste
DIRECTIONS:
- 1. Add everything to a blender or food processor, and slowly drizzle in more oil or water to thin until desired consistency.
- 2. Taste as you go to determine seasonings!!!
