PB + G Balls

I’m a class-A snacker. It’s a running joke that I always have loose nuts in my pockets or in my purse (I do), but with good reason! I know how agitated I get when I’m hungry, so I take preventative measures. Just like my meals, I like to enjoy snacks that have a little pizzazz. Don’t get me wrong, I will forever love some raw cashews, but sometimes I want something more special. Something that packs a lot of protein, is easily portable, satisfies my hunger, and brings peace, joy, and serenity to my taste buds… Which brings me to my current interest in energy balls. Contrary to the popular energy bar, these bad boys provide a uniquely delightful taste, and a bit of visual interest.

*The recipe is highly adaptable to create bars (if that’s more your speed), but if you’re ready to live a little, join me!!!

 

Peanut Butter + Goji Balls (The adult version of a PB&J, if you will…)

INGREDIENTS:

  • ½ cup goji berries
  • ½ cup peanut butter
  • ¼ cup cashews
  • ¼ cup almond flour
  • 3-4 basil leaves
  • 4-5 mint leaves
  • zest of half a lemon
  • 1 T maple syrup
  • 1-2 T chia seeds
  • salt to taste

DIRECTIONS:

Pulse, roll, and freeze!
