Nothing says HELLO, GOOD MORNING, LET’S TAKE IMMEDIATE ACTION TO IMPROVE OUR HEALTH AND WELLBEING like a good chia seed pudding. No? Just me? Well, allow me to change your mind. Chia seeds are little powerhouses that PACK A PUNCH. They are a brilliant source of plant-based protein, fiber, and omega-3 fatty acids. And because they don’t have a taste and absorb liquid like little tiny sponges, they are extremely versatile. So as someone who is perpetually aiming to be productive, I combined two morning steps (breakfast and coffee) and created Coffee Chia Seed Pudding!!!!! So bada-bing, bada-boom, GO ON AND GET YOUR DAY ON!

Coffee Chia seed Pudding

INGREDIENTS:

3/4 cup coffee cold brew

1/3 banana

2 T buckwheat groats

4 T chia seeds

DIRECTIONS:

  1. Mash banana.
  2. Mix with remaining ingredients.
  3. Refrigerate overnight and enjoy in the morning.

**word to the wise: check your teeth after eating. Mighty, but small, these teeny seeds have a special knack for nestling up right between your two front teeth.
